8Days Out & Meals Out...COTTAGE Crafts is a little business based within Goostrey Home & leisure. It is run by the lovely Cath, who sources, makes and paints cute fairy houses and accessories. Her permanent stall is in the craft room, where lots of other businesses sell their items too. What’s extra special about Cottage Crafts is that during the school holidays she runs children’s workshops. You can book your child onto these 1 hour sessions where they can make their own fairy house. Cottage crafts provide all the beautiful little pieces you will need to make your magical creation. It costs just £10 per child or there is a discount on multiple bookings. To book, simply send Cottage Crafts a message on Facebook or Instagram. At different times of the year, the fairy houses are themed with seasonal extras. At Christmas you can turn your fairy house into a winter wonderland with snow and Christmas decorations. And at Halloween, there is something a little extra spooky to be added. The company also makes and sells finished items, which make perfect gifts. They do lovely items for Mothers Day and Teacher Gifts. A lot of their items can be personalised for only a couple of pounds to make them extra special. Birthday Parties are another fantastic addition to what Cottage Crafts Offer. I attended one when it was my nieces birthday party. A group of 10 girls sat around a table in Goostrey’s Café carefully crafting together was lovely to see. Afterwards, they could have an ice cream and play in the Goostrey Home & Leisure play area. It worked perfectly as a party and the girls really enjoyed making their fairy house to take home. Cath and the ladies that help run the workshops and parties are so good with the children. Friendly and very patient, which is what you want for when crafting with children.Jenny, Days Out and Meals Out Reviews To find out the dates for the workshops on Facebook & Instagram serach Cottage Crafts or email cath@cottage-crafts.comMake your own fairy house workshops at Goostrey Home & LeisureGoostrey Ln, Goostrey CW4 8HE £10 per child. 1212Marvellous minerals...MACRO and Micronutrients are essential dietary elements that our bodies require in varying amounts for it to successfully carry out its many physiological functions and are vital to maintaining an optimal level of health. Macro nutrients are Carbohydrates, Proteins and Fats. Needed in larger amounts they are vital to the body as a source of fuel whilst also providing the necessary components needed to maintain structure and function. On the other hand, micronutrients are required in much smaller quantities (hence the ‘micro’) yet have equally important roles to play in the body. Micronutrients comprise water soluble and fat soluble vitamins, microminerals and trace minerals. Macro and micro nutrients are often described as ‘essential’ nutrients as they do not occur naturally within the body, which means these crucial components need to be supplied via the foods that we eat daily. These important life supporting nutrients are found in a wide variety of foods such as fruit, vegetables, nuts, seeds, grains and legumes and in varying concentrations. If we take magnesium for example, one of many important micronutrients. Magnesium is essential for an array of biological functions and its importance in maintaining health and wellbeing should not be overlooked. Abundant in the earth’s crust magnesium is involved in over 300 enzymatic processes in the body with a reputation of being the mineral that ‘sparks’ life given its role as a catalyst in energy production. It’s an incredibly versatile mineral playing a role in cardiovascular health, mental health – often referred to as the anti-stress or mood mineral, blood-glucose balance, inflammatory processes, kidney health, electrolyte balance, hormonal health, bone and muscular health to aiding sleep. It’s plain to see why it’s so important to incorporate it into our diets. However, it has been reported that the UK population fail to consume the necessary amount of Magnesium to achieve the basic daily amount of 300mg and 270mg daily for men and women respectively. Which means many may have suboptimal levels. One reason for this may be overall reduction in magnesium in plants and cereal grains which can be attributed to monoculture farming methods where soils are eroded, improperly mineralised and not rested. The rise of fast food and overly processed meals may also lead to lower magnesium intakes as can certain lifestyle factors – smoking, caffeine and alcohol intake, heavy sweating through exercise, soft water regions, stress, prescription medications, poor absorption (often associated with gastrointestinal issues), certain health conditions and bouts of sickness and diarrhoea can all lead to depletion within the body.Symptoms of a possible magnesium deficiency can present as fatigue, insomnia, pain related conditions, ability to cope with stress, hormone imbalance to more serious chronic conditions Ideally, consuming a variety of magnesium rich wholefoods is a good way to maintain adequate levels in the body and prevent deficiency. Opt for almond and cashew nuts, pumpkin, sunflower, sesame and flaxseeds, green leafy vegetables such as swiss chard and spinach, grains particularly millet, buckwheat, quinoa, oats and brown rice. Tofu, squash, avocado, black beans and broccoli are also excellent sources. And one you may be surprised by… dark chocolate! (in moderation may I add and with at least 70% cocoa solids)In a nutshell, it makes perfect sense to consume a varied, nutrient dense, rainbow diet to ensure we obtain a plentiful and balanced intake of the essential nutrients required to sustain a healthy life. As the old adage goes “you are what you eat”. Another option is to source a quality magnesium supplement. Widely available in various forms, these are an ideal consideration if adequate intakes cannot be achieved through diet alone and may help top up suboptimal levels. Introducing the Congleton Market Quarter (CMQ), a visionary project that promises to become the beating heart of the community, bringing together a tapestry of vibrant experiences under one roof. As the countdown begins to the grand pre-launch party on September 29th, we invite you to catch a glimpse of the future at this exclusive event.Vision and Concept: The CMQ’s journey began with a simple yet profound vision: to create a harmonious blend of bars, eateries, artisan markets, workspaces, residential properties, and inviting outdoor spaces, all designed to be a source of pride for the people of the town. The aspiration is clear - to transform the CMQ into the thriving nucleus of Congleton, a beacon of inspiration for forthcoming developments. The aim is to rekindle the town’s vibrancy and make it the heart of the community once again.Aligning with Community Desires: As Congleton expands and evolves, the CMQ concept is perfectly aligned with the community’s aspirations. 16Man about town...I was visited by my old friend Nigel a few weeks ago. We hadn’t seen each other for a while so we went for a walk through Congleton. The sun was shining and we were in search of a builder’s brew, a slice of cake and something a little stronger. We were spoilt for choice. Our High Street has had to cope with the massive changes in shopping habits created by the Internet. Nigel, who’s a well travelled man, remarked Congleton has fared better than most nearby towns. I believe he’s correct. And it’s thanks largely to the guile and tenacity of our local business people and the event organises who bring us wonderful annual food, drink and music festivals. The days when we saw shoppers thronging Lawton Street, Bridge Street and High Street are long gone and unlikely to return. While some towns have struggled to adapt Congleton has embraced cafe and entertainment culture with enthusiasm. Even more reassuringly most of the proprietors are independent.I’ve lived in Congleton for more than thirty years. Perhaps I’ve taken the town for granted. I suspect I’d failed to notice just how different the town centre is from that of the early 1990s until Nigel pointed it out.Shops exclusively selling baby clothes or sports gear are gone as are some of the big chains like Woolies and Dotty P’s. Many of the banks have abandoned the town too. What we have left could easily have been a dried up husk of a town centre like some of our neighbours. Congleton’s different. While it’s not beyond more improvement we do have a town centre with a different and sophisticated vibe. For foodies there’s a massively varied choice on offer. There are bistros offering a wide range of flavours in very pleasant surroundings. Some are well established, others are more recent arrivals. There are venues with a sharper focus. If you’re an Italian aficionado or a tapas junkie you won’t go wrong. From further afield there’s Indian, Chinese, Jamaican and even Tibetan. Most of it provided by independent restaurateurs. The town’s tearooms range from the swish and high end popular with “ladies what lunch” to shabby chic and not-for-profit community cafes. From what we saw, they’re doing well.Congleton had a reputation as pub town. There remains a large number of hostelries. Some of the oldest and most established venues have been refurbished or reopened in recent times which is great to see.Their efforts are complemented by the many town centre events that draw thousands of people to Congleton from far and wide. There’s something in the town’s DNA that encourages entrepreneurialism. The independent streak might be a result of Congleton’s relatively isolated location. As Nigel said, you can get everything you need without leaving the town.Mindful of the Treason Act 1351, and being reluctant to follow Lord Haw Haw to the gallows, I’d better be care fun how I phrase this. Perhaps Congleton should celebrate and declare its own “Independents Day”?Mark Edwardson

18NO matter how much we try to think positive thoughts and be optimistic about the future, unpleasant thoughts will still arise, especially when we want to be more positive and accepting. This is a nice, easy and short meditation to help us deal with these intrusive thoughts more effectively.Sometimes, you cannot avoid negative thoughts, and there is no use in pretending they aren’t present.Your mindfulness practice can help you approach these thoughts with curiosity. As you build an understanding of your unpleasant thinking patterns, they will no longer hook you in so strongly. You can learn to allow them to be present without letting them consume you. This exercise is a practice in letting thoughts go so that you are better able to do it when negative thoughts arise.Close the eyes and tune in to the points of contact in the body.Feel yourself grounded and stable as you sit.Breathe deeply, feeling the body supported by the chair or cushion.Pay attention to the experience going on in your mind right in this moment.Notice any thoughts as they arise, and try to identify any emotions that go with them.Pay special attention to negative thoughts, and note what you’re feeling or thinking.Try to avoid the word negative, and instead identify each thought as sad, unpleasant, irritating, painful, or otherwise.Continue for five minutes, noting any thoughts and their accompanying feelings.Make impermanence the focus of this practice.See each thought and acknowledge it as it passes, being curious and non-judgemental.If a particular thought is hard for you, face it and welcome it in, placing it on the workbench of your mind. And taking a mental step backwards, observe the thought with a detached ‘beginners mind’ attitude, just noting what comes up for you.Continue to note what you’re thinking about and how it feels, using noting phrases like “Coming, going” or “Arising, passing,” if you choose. After five minutes, return to the body for a few deep breaths.Remind yourself that thoughts come and go, and you have a choice in whether or not you believe each one.Spend a final minute simply breathing easily and enjoying the breath on it’s journey around your mind and body and then, bring your meditation to a gentle close.Stretching, smiling and opening your eyes, and ready for the rest of your day.Mike HollandMind Being YouDealing with negative thoughts...
WILL WRITING • WILL TRUSTS • ASSETS TRUSTPOWER OF ATTORNEY • INHERITANCE TAX PLANNINGTelephone 01270 667 912 or visit www.sanctuarytts.comSanctuary Tax & Trust Services Ltd, 41 Lawton Road, Alsager ST7 2AAAs the cost-of-living spirals and more of our children struggle to get a footing on the property ladder it is now more important than ever to plan our family’s inheritance. The team at Sanctuary Tax & Trust explain how many families nd themselves victims of avoidable losses and why simply writing a will does not guarantee our family will inherit as we wish. For the vast majority of people, we spend all our lives working to build up wealth, through property, savings and pensions we look at providing nancial security for our families and when our nal day arrives, we hope these assets will pass to the people we care about the most, partners, children, relatives and friends. Traditionally, people have chosen wills to document their wishes and while writing a will is important, it does not provide any protection for the assets within it.Considerations when planning InheritanceCare Fees – As we live longer the likelihood of needing care becomes greater and under the government’s changes to the social care act should the need for care arise, we could see our asset taken down to just £14,250. The new assessment process will see everybody with property and savings over a combined value of £23,250 being required to pay for their care.Relationship Failure – When passing assets purely through a will we see many leaving their assets to their children but not giving consideration to what would happen if one of their children was to divorce. This can lead to a child seeing half of their inheritance in the hands of an ex-partner and in the event of early bereavement this can lead to grandchildren being disinherited.Inheritance Tax – The current IHT framework can be complex and unknowingly people can leave their children and even grandchildren with an Inheritance tax issue.Probate – The cost of probate as risen dramatically over the last few years, and it can be a lengthy and drawn-out process. On average, with a valid Will, probate will typically take 6 – 12 months to complete, without a Will it may can take up to 2 years. Its Never the Wrong Time To Do The Right Thing – While people appreciate that inheritance planning is important many will delay seeking the correct advice. By putting o arranging our aairs we run the risk of running out of time, or in the event o illness, seeing our options dramatically reduced. Why Sanctuary Tax & Trust Services? With over 20 years of experience in Estate and Inheritance planning we have helped families in the area protect their assets and plan their inheritance in the most cost-eective way. While the individual family’s circumstance may vary, the one constant is that each family aims to provide the maximum amount of inheritance possible without the stress of complexed legal jargon.
20Congleton’s heritage...LOOPING its way across Cheshire is the, well, pretty important river Dane. Arguably it appears at its best when passing through Congleton. The town has kindly provided an elegant parkland setting. More than that however the Dane also carries some interesting historical - and literary - associations. This river-name itself is a very old, ‘pre-English’ word. Its Celtic origin is related to Old Welsh dafnu meaning ‘to drop, trickle’. So, from earliest times it was known as ‘the trickling stream’. Maybe a little irony on the part of the Britons, as the Dane has quite a propensity to flood. At Northwich Dane becomes Weaver, again a native British name and related to the Latin word vibrare, translating as ‘winding’. The Weaver joins the mighty Mersey (or ‘boundary river’) at Runcorn.Still on a watery theme, one of the best-known castaway novels ever is Robinson Crusoe. But what has that famous tale of desert islands, isolation and survival at sea possibly got to do with the river Dane? The local link occurs with its author, Daniel Defoe. After adventuring this time not in fiction but In Real Life, he compiled a three-volume guide book called ‘A Tour Through the Whole Island of Great Britain’. Defoe’s account of his travels of the mid-1720’s captures glimpses of early Georgian landscape and industry. In particular he seemed hopeful of the economic opportunities of the Canal Age yet to come, noting both natural watercourses – and artificial improvements. He even explored ‘down our way’.‘The situation of Liverpoole’, he declared, ‘gives it a very great advantage to improve their commerce, and extend it in the northern inland counties of England, particularly into Cheshire…by the new navigation of the rivers Mersee, the Weaver, and the Dane…’. Maybe not the Dane! What else did Daniel Defoe say about our area? Here he gets a bit dramatic. ‘One branch of the Trent rises within a quarter of a mile of the Dane, from a moor adjoining to, or part of a little ridge of hills called Molecop Hill, near Congleton, and is within twenty-two miles of the Irish Sea, or that arm or inlet of the sea which the Mersee makes from Frodsham to Liverpool and Hyle-Lake; and as the Dane runs into the Weaver… and the Trent into the Humber, which opens into the great German Ocean, those rivers may be said to cut the island across the middle.’Local observations of 300 years ago, quaintly spelled to us now, remain intriguing. Heritage, happily, comes in very surprising places!Julie Elizabeth Smalley

24Magic of journalling...A journal provides a safe and private space to explore your inner world, gain clarity and navigate life’s challenges. It’s a place to explore, process and organise your thoughts to help make better life choices – and you can write about anything and everything. Think of it a bit like a personal, confidential pocket self-help coach! What is Journalling?Journalling is a powerful and reflective practise that has been around for centuries as a way of self-expression, self-discovery and personal growth. At its core, journalling involves putting pen to paper (or fingers to keyboard or screen) to record your thoughts, emotions, experiences and reflections. Some even include doodles, material cutouts or photographs.Whether you’re a seasoned writer or a novice, journalling is a versatile and accessible tool, regardless of age, background or ability. It offers many benefits beyond the mere act of writing, fostering a deeper connection with yourself and the world around you. There’s no right or wrong way to journal. It’s a free resource, there when you need it, that can offer a transformative and enriching experience to help you feel happier and make better decisions. Now who doesn’t want more happiness in life?Journalling BenefitsThere are many benefits to keeping a journal and the following list is by no means exhaustive. • Stress Reduction• Enhanced Self-Awareness• Problem Solving• Emotional Regulation• Improved Creativity• Goal Setting and Achievement• Boosted Memory and Learning• Positive Mindset Over the coming months, we’ll explore different ways to journal and review the short-term and long-term benefits of building a regular habit. You can test some exploratory writing exercises to see what works for you and reflect on how journalling can improve your wellbeing.Hi, I’m Anna.As a creative and exploratory writer and journal guide, I love the power of words. I’ve been a copywriter and content creator for 23 years, but my passion is writing for wellbeing, a.k.a. journalling. Regularly freeing my head of emotional baggage is cathartic and working through my thoughts and emotions has helped me become more self-aware, tolerant, positive and creative. I’m an overthinker, so making sense of what’s actually important has enabled me to create a more fulfilling life, rich with experiences by connecting with nature, mindfulness and adventure travel that supports personal growth.I’m on a mission to share the benefits of writing for wellbeing with as many people as possible and I hope you’ll gain as much enjoyment learning about how to journal for your own wellness over the coming issues as I have done creating them.Next month, we’ll look at how to create a positive mindset and get stuck into gratitude journalling.Anna WoolliscroftYou can find me on Instagram, TikTok or Facebook: @JournallingWithAnna

Your feet & your heart...What’s the connection? Believe it or not there is a close connection between our feet and heart. September is vascular disease awareness month, so we decided to talk about it!Our feet provide important indicators for general wellbeing, and foot health can directly relate to heart health. Your heart is a muscle that pumps blood around the body, providing the feet with oxygen and nutrients. If blood flow is reduced, simple issues such as ingrown nails, cuts or bunions can result in serious complications.Peripheral Arterial DiseasePeripheral arterial disease, or ‘PAD’ for short, is a cardiovascular disease in the legs and feet. A build- up of fatty deposits causes plaque in the arteries of the legs, restricting blood flow to the feet. Having PAD increases your risk of heart attack or stroke as it can indicate more widespread plaques in other arteries, such as those supplying the heart.Signs and symptoms of PAD• Cramp or ache in back of legs when walking, relieved with rest.• Cold/numb feet• Blue/purple or very pale skin.• Sores/ ulcers that don’t heal.• Swelling to lower legs or feet• Thick, brittle nails and smooth, shiny, hairless skinReducing risk factorsSmoking, obesity, low exercise and high blood pressure or cholesterol are risk factors for PAD. The following lifestyle changes can reduce these risks and have lifesaving implications.• If you smoke, quitting can half your risk of a heart attack.• Dietary changes – try a heart healthy diet such as the ‘Mediterranean diet’.• Stay as active as possible and exercise moderately (getting out of breath) for at least 150 minutes a week. A foot pedal exerciser is great if you’re less mobile.• Reduce stress and improve sleep quality. Walk outside in nature and sunlight, avoid screens at night, reduce caffeine after midday and try not to eat just before bed. Try complementary therapy such as massage, reflexology, meditation, or relaxation techniques. When you visit a podiatrist for the first time, they will usually check the pulses in your feet as part of a vascular assessment. If foot pulses are week or can’t be felt, you may be referred for further investigation. Detecting PAD early can save lives.Anna & Andrew AyresAyres Health26

28Joy of reading...IN a fast-paced digital age, the simple pleasure of immersing oneself in a good book might seem like a distant memory for many. However, amidst the hustle and bustle of modern life, the act of reading a book remains a timeless and invaluable treasure that offers countless benefits to individuals of all ages. From mental stimulation to emotional enrichment, let’s embark on a delightful journey to unveil the numerous advantages of delving into the pages of a book.Mental Stimulation - Reading a book is like a workout for the brain. As you navigate through the plot, characters, and settings, your mind becomes fully engaged, igniting various cognitive functions. This mental exercise strengthens neural connections, improves concentration, and enhances analytical thinking. The more you read, the sharper your mind becomes, creating a reservoir of knowledge and wisdom to draw from.Escape and Imagination - In the realm of books, there are no boundaries to the adventures one can embark upon. Whether you’re whisked away to a fantastical realm, a historical era, or an unknown future, books offer an unparalleled escape from reality. They kindle the flames of imagination, allowing readers to visualize vivid landscapes, empathize with diverse characters, and immerse themselves in captivating narratives.Stress Reduction - In a world filled with stressors, a book can be a soothing balm for the soul. The act of reading relaxes the mind and body, easing tension and reducing stress levels. It provides a tranquil respite from daily worries, offering a much-needed opportunity to unwind and find solace between the pages.Empathy and Emotional Enrichment - Books are powerful vessels that transport readers into the hearts and minds of characters from all walks of life. By experiencing the world through different perspectives, readers develop a profound sense of empathy and understanding for others. This emotional enrichment nurtures compassion and broadens one’s horizons, making the world a more compassionate and interconnected place.Knowledge and Learning - The pursuit of knowledge is at the heart of reading. Books are an endless source of information, offering insights into diverse subjects, cultures, and ideas. Whether you’re learning a new skill, exploring historical events, or pondering the complexities of the universe, books satiate your thirst for knowledge and encourage lifelong learning.Improved Vocabulary and Language Skills - Reading regularly exposes you to new words, phrases, and sentence structures, thus expanding your vocabulary and language skills. A rich vocabulary empowers you to articulate your thoughts more effectively, improving communication and enhancing your ability to express ideas with clarity and precision.Enhanced Focus and Concentration - In an age of constant distractions, reading a book demands focus and concentration. As you immerse yourself in the narrative, your attention becomes finely attuned to the storyline, fostering improved focus and a heightened ability to concentrate on tasks in other areas of life.Better Sleep - Engaging in a book before bedtime can be a marvellous antidote to sleeplessness. The gentle act of reading calms the mind, creating a peaceful transition into dreamland. Unlike screens emitting blue light that disrupts sleep patterns, books provide a serene and beneficial way to unwind before drifting off to a restful slumber. In conclusion, the joys of reading a book are boundless, offering a multitude of benefits that enrich our lives in countless ways. So, let’s dust off those old favourites or discover new literary gems, for the world of books awaits us with open arms, ready to bestow its bountiful gifts of wisdom and wonder. 30Bridging The Gap Mind Matters... The physical & mental health linkIN recent years, the connection between physical health and mental well-being has gained significant attention in the field of healthcare and wellness. Emerging research has shed light on the profound impact that physical health can have on an individual’s mental state. Let’s explore the crucial relationship between the two and how taking care of our bodies can positively influence our minds.1. Chemical and Neurological InfluenceThe brain and body are intricately linked through a complex network of chemical and neurological pathways. Regular exercise, a balanced diet, and sufficient sleep release endorphins and neurotransmitters that promote feelings of happiness, reduce stress, and improve overall mood. On the other hand, poor physical health, such as sedentary lifestyles, unhealthy eating habits, or lack of sleep, can disrupt this delicate balance and contribute to the development of mental health disorders.2. Reducing Stress and AnxietyEngaging in physical activity has been shown to reduce stress and anxiety levels. Exercise stimulates the production of norepinephrine, a neurotransmitter that plays a vital role in stress response regulation. Regular physical activity can help individuals cope better with daily stressors, improving their resilience and reducing the risk of anxiety-related conditions.3. Boosting Self-esteem and ConfidenceMaintaining good physical health can have a positive impact on self-esteem and self-confidence. Achieving fitness goals, adopting healthy habits, and feeling physically capable can enhance an individual’s self-image and overall sense of worth. Improved self-esteem can act as a protective factor against the onset of mental health issues like depression and anxiety.4. Enhancing Cognitive FunctionPhysical health not only influences emotions but also plays a significant role in cognitive function. Regular exercise has been linked to improved memory, enhanced focus, and increased productivity. Moreover, physical activity fosters neuroplasticity, encouraging the brain to form new connections and adapt to changing environments.5. Sleep and Mental HealthSleep is a critical component of both physical and mental well-being. Poor physical health can lead to sleep disturbances, which, in turn, negatively impact mental health. Chronic sleep deprivation has been associated with mood disorders, reduced cognitive function, and an increased risk of mental health problems. Prioritising good sleep hygiene and addressing physical health issues can significantly improve sleep quality and, consequently, mental well-being.6. Breaking the Cycle of Mental IllnessPhysical health can play a crucial role in breaking the cycle of mental illness. For instance, individuals with depression or other mental health conditions may experience decreased motivation to engage in physical activity or practice self-care. By actively working on improving physical health, such individuals can create positive feedback loops, breaking the cycle of mental health challenges and fostering a sense of control over their lives. The intricate relationship between physical health and mental well-being cannot be understated. By recognising the profound impact that physical health has on our mental state, we can take proactive steps to prioritise our overall well-being. Engaging in regular physical activity, adopting a balanced diet, ensuring adequate sleep, and addressing physical health concerns are essential strategies for promoting mental resilience and fostering a happier, healthier life. Embracing this approach to health can lead to a more balanced and fulfilling existence for individuals seeking to improve their overall quality of life.In recent initiatives like the Respite Programme by Bridging the Gap - Mind Matters CIO, the link between physical health and mental well-being has been duly recognised. The program offers individuals the opportunity to partake in physical therapy alongside talking therapy when they are struggling with their mental health. By combining these therapeutic approaches, the Respite Programme aims to enhance the overall well-being of individuals, acknowledging the significant relationship between physical and mental health in the journey towards improved mental wellness.www.BTG-mindmatters.orgConsider taking a look at www.BTG-mindmatters.org to complete an application.

38The secret chef...Method:Make the marinade in a flat dish of a size that will allow the duck breasts to lie flat. Skin the duck breasts and score the top side where the skin was removed. Marinate overnight if possible (but at least 4 hours), turning and basting once. For the sauce add all the ingredients to a pan, bring slowly to the boil and simmer until the plums are soft. Blend with a hand blender until smooth. Taste as the sweetness will depend on how sweet the plums are to start with. Add more brown sugar if desired, but retain the tartness.Heat a non-stick ribbed frying pan and cook the duck breasts for about 5 minutes each side. Remove and cover in tin foil to rest.Serve with roast parsnips, broccoli and sautéed red cabbage. Duck with a tart plum sauceIngredients:2 duck breastsFor marinade:2 cloves of garlic, crushed1 cm root ginger, grated1 tbsp light soya sauce½ tbsp Worcester sauce1 tbsp runny honeyground black pepperFor Plum Sauce:500g red plums, stoned (do not skin)1 cup red wine3 tsp mixed spice ¼ cup brown sugar Tips:Serves 2We always freeze the root ginger. It keeps longer this way and is easier to skin and grate. The excess marinade can be added to the plum sauce if desired. The plum sauce can also be used with ham, smoked meats or haggis. This dish needs a heavy red wine such as an Australian Shiraz, a French Cahors or a Sicilian Corvo.Simplydelicious.
